The market for gluten-free food and beverage products grew 28% from 2004 to 2008, finishing with about $1.5 billion in retail sales last year, according to Packaged Facts, which released its new report, “The Gluten-Free Food and Beverage Market: Trends and Developments Worldwide,” 2nd Edition. The market is expected to reach about $2.5 billion in sales by 2012, according to the report.
